SPINACH AND BLUE CHEESE BURGER

15 minutes prep time
25 minutes cooking time
Serves 2

2 large hamburger buns
2 1/3 pound hamburger patties
2 medium onions
1 tablespoon crème fraîche or Greek yogurt 
3 ounces Roquefort cheese
2 handfuls baby spinach 

Preheat oven to 350°F. Chop the onions and sauté in an oiled pan over medium heat. Once lightly browned, lower the heat, add salt and pepper and let caramelize for 20 minutes. Slice the buns in half, if necessary

Mix the crème fraîche and cheese and heat in the microwave for 20 seconds. Warm the buns in the oven for 5 minutes.

Season the patties with salt and pepper, then cook in an oiled pan 1–2 minutes on each side.

Arrange the onions, patties, cheese sauce, and spinach on the buns. Top to finish.


TZATZIKI CHICKPEA BURGER

15 minutes prep time
15 minutes cooking time
Serves 2

2 large hamburger buns
12 ounces chickpeas (cooked) 
2 teaspoons cumin seeds 
1 medium tomato
1 1/2 scallions
1/2 cup tzatziki

Preheat oven to 375°F. Strain the chickpeas, then blend in a food processor along with the cumin seeds, salt, and pepper. Shape into patties. Bake for 10 minutes.

Dice the tomato and chop the scallions, then mix to combine with salt and pepper.

Slice the buns in half, if necessary, and warm in the oven for 5 minutes.

Spread the tzatziki on the buns, then arrange the patties and tomato salad. Top to finish.
